Pizza-flavored cream sauce
When I was a child, My Grandma often served Me My very favorite meal: young potatoes covered by cream sauce. It made a hit with Me and years later I definitely wanted to return to this concept and revitalize it a little :) .
So I did that and by now I've prepared many various versions of this sauce. For example, last night (cooking from about 1 to almost 5am! ;) ) I did a version with pizza flavor inside :) . I was impressed how little ingredients were enough to give that pizza-like aroma.
But before I share this particular one, I tell You about the basic concept from My childhood - in order for You to have some starting point :) .
Cream sauce - basic concept.
Ingredients:
- cream (as much as You prefer, I use 500ml of any kind),
- fresh finely chopped dill,
- couple of finely chopped onions,
- salt (as much as You prefer);
Preparation:
If My memory serves Me correctly, Grandma put (on a frying pan) finely chopped onions and just after that she added cream, dill and probably salt, stirring all together. I suppose she used some oil at the very beginning. She fried the sauce to boil, and boiled it couple minutes. That's all - the sauce had been ready :) .
Pizza-flavored variant.
Ingredients are the same - but I add more spices: Herbes de Provence and curry. Those two are responsible for this delicious, pizza-like flavor :) .
Preparation:
What I do differently is I begin with onions, frying them to make them a little brown... About in the middle of this process I spice them. When onions are done, I add cream, more spices, stirring and frying to boil (the point is the sauce should boil for a couple minutes).
If I use some other ingredients (see down below), I also prepare them before adding cream. I add cream always when all ingredients all almost done (I mean: to the point of My taste - I prefer all thing to be really soft, tender, juicy and visibly fried :) ).
The best thing in this recipe is that You can play with it to Your heart's content - modifying ingredients, experimenting, having fun and a lot of delicious taste :) . There are many things You can modify, for example:
- instead of fresh dill You could use dried one,
- You could add various spices according to Your individual taste (I highly encourage people to experiment with spices in a broad scale - without suggesting on particular spice's purpose, written on its pack),
- You could add more ingredients - for instance by adding ketchup or tomato puree/concentrate You will end with even more pizza-like cream sauce, but You could prepare versions based on mustard,
- it is also a great idea to add chopped tomatoes and/or mushrooms (I prefer Portobello), grated celery...;
